
OUR AGAVES

Morelos, a remarkable region thanks to its fertile soil and warm climate, is home to agave heads ranging from 80 to over 200 kg. At Destilería Cazales, we primarily grow espadín agave—a typical mezcal agave—to produce our “Lo Que Toma El General” mezcal. However, we also grow agaves native to the region, some of which are not even classified and are known simply as “maguey de cerro.”

AGAVE ROASTING
Given our artisanal approach, we decided to roast our ripe agave heads in a wood-fired oven with a capacity of 8 metric tons of raw material.
The fermentation of our agave juice occurs naturally without the use of any accelerants; once nature has done its work, we begin the first distillation.

DISTILLATION
At the Cazales Distillery, we are committed to offering our customers a product of the highest quality. That is why we double-distill our product to avoid heavy alcohols that could be harmful to our customers’ health. Our stills are made of 100% copper—from the pots to the coils—which guarantees a unique flavor in our mezcal.
